Pick up almost any bag of specialty coffee in the United States today and you will find a flavor description somewhere on the label. Perhaps it reads: dried cherry, dark chocolate, cedar, and a lingering caramel finish. Or maybe: bright bergamot acidity, honeysuckle, and stone fruit with a silky mouthfeel.
For the uninitiated, these phrases can feel alienating — the vocabulary of an in-group you were never invited to join. For the experienced drinker, they can occasionally feel hollow, strung together more for aesthetic appeal than genuine utility. And yet, tasting notes are not meaningless. They are imperfect but earnest attempts to translate a deeply personal sensory experience into shared language.
The question worth asking is not whether tasting notes are pretentious. The more useful question is: what are they actually trying to tell you, and how do you learn to hear it?
The Sensory Reality Behind the Language
Flavor perception is not a single sense — it is the integration of at least three: taste, smell, and what scientists call chemesthesis, the sensation of heat, cooling, and astringency on mucosal tissue. When you take a sip of coffee and notice something you might describe as brightness or sharpness, you are largely responding to acidity — the presence of organic acids like citric, malic, or phosphoric acid, each of which produces a slightly different character on the tongue.
When a roaster writes bergamot or jasmine on a tasting card, they are pointing toward volatile aromatic compounds that your nose detects through retronasal olfaction — the process by which aromas travel from the back of the mouth upward into the nasal cavity as you swallow. This is why coffee smells different when you drink it than when you simply sniff the bag. The act of tasting activates an entirely different olfactory pathway.
Descriptors like chocolatey finish or caramel sweetness are referencing the Maillard reaction compounds produced during roasting — the same chemical family responsible for the crust on a piece of toasted bread or the surface of a grilled steak. These are not invented associations. They are the brain's attempt to match unfamiliar compounds to familiar ones stored in memory.
The challenge is that flavor memory is personal. If you did not grow up eating lychee or drinking black currant juice, those descriptors may be genuinely inaccessible to you — not because your palate is inferior, but because you lack the reference point.
Why Tasting Notes Sometimes Fail
The specialty coffee industry has, at times, overcomplicated its own communication. There is a real tension between precision and accessibility. A trained Q-grader evaluating a coffee for competitive scoring has legitimate reasons to reach for specific, technical descriptors. A bag of coffee on a grocery shelf does not need to describe itself as having tamarind and dried hibiscus complexity if the intended audience has never encountered either ingredient.
The problem is not the language itself — it is the assumption that the language is self-explanatory. Tasting notes work best as an invitation to look for something specific, not as a verdict on what you should be experiencing. If you brew a Maruyama single-origin from the Huila region of Colombia and the bag says red apple, brown sugar, and walnut, that is a suggestion of where to direct your attention — not a test you can fail.
Perhaps more importantly, the descriptor you land on may be entirely different and equally valid. If you taste something you would describe as dried cranberry where the roaster wrote dried cherry, you are not wrong. You are simply working from a different flavor memory, and both perceptions may be pointing at the same underlying chemical reality.
Building Your Own Reference Library
The most effective way to make tasting notes useful is to actively build the sensory references they draw upon. This does not require formal training — it requires deliberate attention.
Start with the SCA Flavor Wheel as a map, not a rulebook. The Specialty Coffee Association's Coffee Taster's Flavor Wheel organizes descriptors from broad categories (fruity, floral, nutty) down to specific references (peach, rose, hazelnut). Use it to orient yourself when you encounter an unfamiliar descriptor, then work backward to see whether it resonates with your actual experience.
Conduct side-by-side tastings. Brew two coffees from different origins simultaneously and compare them directly. The contrasts between, say, a washed Ethiopian and a natural Brazilian are far more legible when you taste them together than when you encounter them weeks apart. Difference is easier to perceive than absolute quality.
Taste the references themselves. Keep a small selection of dried fruits, nuts, and citrus peels near your brewing station. When a bag describes a coffee as having dried apricot notes, taste an actual dried apricot before or after your brew. The comparison is often revelatory — and sometimes humbling.
Take notes in your own words first. Before reading the tasting notes on a bag, brew the coffee and write down three words that come to mind unprompted. Then compare. This practice trains you to trust your initial perception rather than retroactively fitting your experience to someone else's description.

Coffees from lower-altitude growing regions in Brazil or Sumatra tend toward heavier body, earthier tones, and lower acidity. These are tendencies, not guarantees — but they give you a framework for anticipating what you might find in the cup before you ever brew a gram.
The Deeper Purpose of Tasting Notes
At their best, tasting notes do something more than describe flavor. They connect you to the place and people behind a coffee. When you read that a Maruyama lot from a small producer in Guatemala carries stone fruit sweetness and a gentle cocoa finish, you are receiving information about soil composition, microclimate, and the care taken during processing — expressed through the medium of flavor.
Learning to decode that language is not about becoming a coffee expert. It is about deepening the experience of discovery — which is, ultimately, what this site exists to facilitate.
